Résumé anglais Structural Changes: The Case of Food Consumption in France from 1949 to 1988, by Pierre Combris. Analyzing changes in food consumption over a long period of time poses the problem of accounting for behavioural change. This paper analyses the stability of household demand functions estimated on an annual time series, using the French National Accounts data from 1949 to 1988. Particular attention is paid to food consumption, and to the existence of structural change in meat consumption, about which a debate is developing in North America and Australia. There is clear evidence that tastes have changed according to the findings of this report.
