Abstract. ― Cheesemongery societies, also called « » Haute-Savoie and in Savoie, bases of an original social and economic organisation, are in crisis. The origin of their prosperity, the making of cheese of the same kind as « gruyère », is called in question again by the advent of new technics and by the coming of new competitors.
