Cet article propose une réflexion empirique sur les processus d'acculturation entre colons et indigènes dans l'Indonésie de la fin du xixe siècle. Il souligne l'importance des mécanismes d'hybridation qui se manifestent dans les pratiques vestimentaires, culinaires et dans le domaine des cultures matérielles. The Taste of Yellow Papaya This article is an empirical study of processes of acculturation between colonial authorities and local populations in Indonesia at the end of the nineteenth century. Beyond apparent segregation of colonizers and colonized, mechanisms of hybridation were manifest in culinary practices, practices of style and clothing, and in the domain of material culture more generally.
